Meal prep for the week just got a whole lot crispier with these easy crispy potatoes. They are my absolute favourite thing to make, especially when I am looking to add a little comfort food to my meals. In a few quick steps you can make these little wonders and add them to green salads, potato salads, simple hashes, beans, and even bowls.
Slice baby potatoes in half and add to a large pot. Fill pot about halfway, completely covering the potatoes. Make sure it is cold water.
Place on stove and bring to a boil on high heat. Next, add salt (about 1 tbsp), and continue to cook until fork tender.
Drain potatoes and pat dry with a dish towel or paper towel. Transfer potatoes to a baking dish or cookie sheet (if using a cookie sheet make sure to line). Toss with oil, salt and pepper until evenly coated.
Place in oven on the middle rack and roast for 50-60 mins or until crispy and golden brown.
