Easy Crispy Potatoes

Meal prep for the week just got a whole lot crispier with these easy crispy potatoes. They are my absolute favourite thing to make, especially when I am looking to add a little comfort food to my meals. In a few quick steps you can make these little wonders and add them to green salads, potato salads, simple hashes, beans, and even bowls.

Equipment

  • 1 Baking dish
  • 1 Large pot
  • 1 Colander

Ingredients
  

  • 1 pack red baby potatoes 20-30
  • salt to taste
  • pepper to taste
  • 1-2 tablespoons olive oil

Instructions
 

  • Preheat oven to 420 Fahrenheit.
  • Slice baby potatoes in half and add to a large pot. Fill pot about halfway, completely covering the potatoes. Make sure it is cold water.
  • Place on stove and bring to a boil on high heat. Next, add salt (about 1 tbsp), and continue to cook until fork tender.
  • Drain potatoes and pat dry with a dish towel or paper towel. Transfer potatoes to a baking dish or cookie sheet (if using a cookie sheet make sure to line). Toss with oil, salt and pepper until evenly coated.
  • Place in oven on the middle rack and roast for 50-60 mins or until crispy and golden brown.
