Ingredients:
Mango – Here I used frozen mangos because they last longer and are generally cheaper when not in season. For this recipe, we stew our mango to make a sweet and tangy compote.
Lime juice – Lime juice works extremely well with mangos. The juice is added in the stewing process
Vanilla extract – Flavour additive
Almond slices – Creates additional texture and are full of magnesium, and vitamin E to name a few
Unsweetened desiccated coconut – Additional flavour and texture
Ground flax seeds and Chia – These seeds help make these overnight oats thick and creamy. To grind flax seed simply use a clean coffee grinder.
Coconut milk – In this recipe I use unsweetened coconut milk. However, you can use any nut milk you prefer.

- 1 small mason jar or small container
Ingredients
- 1 cup frozen mangos
- 2 tbsp water
- 1/4 juice of a lime
- 1/2 cup oats
- 1/2 cup coconut milk
- 1/4 cup plant-based yogurt
- 1/2 tbsp vanilla
- 1 tbsp maple syrup (honey)
- 1 tbsp almond slices optional
- 1 tbsp unsweetened desiccated coconut
- 1/2 tbsp ground flax
- 1 1/2 tsp chia seeds

- In a pot, add mango and water, increase heat to medium low. Cook until the mango softens, stirring occasionally (Add more water if needed). Once the mangos are soft, add lime juice and continue to cook. Take a fork or use your spatula to mash the mangos. Remove from heat, pour into bowl, and set aside.
- In a large bowl, add all ingredients, from oats to chia seeds, and mix well.
- Take your small mason jar, or small container, and layer your ingredients to create a fun pattern. Then, seal your oats with a lid and pop in the fridge for the next day or up to 7 days.
- In the morning, simply remove from the fridge and eat or add additional toppings such as extra yogurt, or desiccated coconut. My favourite is to pop it in the microwave for a few seconds.
