Who doesn’t love a good croissant french toast recipe? Growing up, my mom always made french toast for the holidays. It was one breakfast we always looked forward to. From brioche breads, to fruited varieties, my mom always made it special.
While creating this recipe, I wanted some things that ticked all the boxes. I love a french toast casserole and how easy it is. I wanted it to have lots of flavour and texture. I am not sure about you guys, but I think french toast is comfort food, so I wanted it to have warm flavours. I set out and created something that was chocolatey, cinnamony, a little crispy but ewwy and gooey, and here’s how.
Croissants – For this french toast I use croissants (specifically mini croissants)! The reason why is because they are buttery and flaky and once they bake with the eggs in the oven, they create the most tender and scrumptious french toast. To make this bake we use full croissants and chopped ones.
Nutella – Who doesn’t love nutella, and what better way to enjoy it then with croissant french toast? It literally tastes like pain-au-chocolat but better! To make sure chocolate is in every mouthful, we layer it between croissants and stuff it inside the unchopped croissants.
Eggs – Having the perfect ratio of eggs when it comes to french toast is crucial for a delicious flavour. Too many eggs can result in an eggy texture but not enough can result in this bake falling apart.
Disaronno (any almond liqueur or extract) – In the recipe we use cinnamon and vanilla extract, however, to take the flavour to the next level we use Disaronno (or any almond liqueur). The almond flavour helps bolster these warm flavours to the next level.

When making french toast, the goal is to not let the bread sit in the egg mixture. You want to quickly cover both sides of the bread slices for even distribution then straight onto the pan. When the eggs are added and baked together with the croissants, it yields this tender bake that has structure and isn’t soggy.

To make this recipe you will need a package of 12 mini croissants. 5 of the mini’s you will leave whole and the rest you chop up into small cubes. When it comes time to assemble the croissant bake, you will divide the chopped croissants in half. Between each layer you will add your eggs and chocolate, then repeat. For the top layer you will slice the whole croissants in half part of the way, then, fill with Nutella. Slit side down, add the croissants to the top, pour the remainder of the eggs on the top and lightly sprinkle with sugar.

Ingredients
Croissant French Toast
- 12 pack of mini croissants
- 5 eggs room temperature
- 1 tsp cinnamon
- 1 tbsp vanilla extract
- 1 tbsp Disaronno (if you are using almond extract instead use ½ tsp)
- 1 tbsp honey
- 1 tbsp granulated sugar
- Nutella
Topping
- maple syurp
- fresh berries
Instructions
- Preheat the oven to 350F and set aside an 8 inch loaf tin or ramekin.
- Set aside 5 mini croissants and with a knife chop up the remaining croissant into 1 inch cubes.
- In a medium bowl, crack 5 eggs, cinnamon, vanilla, Disaronno, honey and sugar. With a fork whisk together until well combined. Remove ¼ cup from the mixture and set a side.
- Divide your chopped croissants in half. Add the first half of the croissants to the loaf pan, making sure they are evenly spread out. Pour half of the egg mixture on top of the croissants. Take a spoon and add four large spoonfuls of nutella staggered across the first layer of chopped croissants and eggs.
- Next, add the remainder of the chopped croissants to the top. Press down slightly to compress the two layers, then evenly pour the rest of the egg and repeat spooning on the nutella.
- Taking your whole croissants, slice down the center part ways down (like a hotdog bun). Fill each croissant with Nutella.
- Place each whole croissant seam/slit side down in the loaf pan. Pour the reserved ¼ cup of the egg mixture evenly over top and lightly dust with sugar.
- Place in the oven for 35-45 mins. You will know it is done when it is amber in colour and has puffed up in size. Let cool for five mins.
- Serve with fresh berries and maple syrup and enjoy!
